
Every Pocket PC has the same software built into it to do PIM (Personal Information Management) stuff, like Contacts / Address book, Scheduling, To-Do lists, Email, etc. So no matter what Pocket PC you go with the software for that type of thing will be the same. So the real issues to consider when buying a Pocket PC is the price, size, performance (how fast it runs software, battery life), and internal hardware (Wireless networking, etc). Gaming is one of the most intensive things you can do with a PDA, so performance and hardware (button design and layout) are key factors.
However for her use (PIM) you pretty much can't go wrong with any Pocket PC.

Press the Calendar button on the front of the Pocket PC
Tap the New button on the screen.
Type in a name for the appointment
Select the Start time and date
Hit OK to save
It can't get any more streamlined than that unless it could read my mind.
