We'd probably use MP3 (or OGG) streaming at about 24kbps.
(*Maybe* WMA, but that's MS and since it's likely that the server would be on a Linux/UNIX box it would be kinda hard.)
As mentioned before the highlights can be saved in downloadable files so people can listen at their own convenience.

I think one would be cool. Please no Real, if you absolutly must, make it compatible with RP8. No way RealOne is going anywhere near my comp. MP3 would do just fine, and is the most compatible. Hey, maybe do the live show in ShoutCast? Could double as a normal ShoutCast music station when the show isn't on.
