How about the ZAYO's speed (with overclocking capabilities), built-in WiFi (and Bluetooth, but I don't care much for BT), dual expansion (CF & SDIO), USB host capabilities (ala Casio e200), audio-in jack (ala specially modified ipaqs sold in Germany somewhere), at least 48 MB ROM (ala new iPAQ), at least 128 MB of RAM (ala upcoming Toshiba or PPC Techs upgrades), removable batteries (with a backup coin battery ala Casio), Casio-style buttons, 4 Mbps (ala ZAYO) and long range (ala new iPAQ) IR, and VGA resolution (pre-release PPCs with VGA have been seen at some computer shows). All of these features have been seen in Pocket PCs of some sort (well, neither the VGA nor the stereo audio-in jacks were OFFICIALLY released PPCs, but they have been shown). If someone could integrate all of this, it would be easy the best PPC, without really doing much creative.
Now, I think a good idea would be to find a way to put 32-bit PC cards in expansion packs so that you can have decent interfaces, like video capturing (ala flyjacket) or FireWire or USB 2.0 or another display or whatever.
The things in my list are all things I'd like in a device. My list of things is completely doable. This may be the only way an OEM could make any decent money selling PPCs. The more expensive your device, the larger your profit margins.
BTW, I think having two speakers built-in would be a good idea, Moose.
With all of these things and an upgraded PPC OS (so that PIE is faster and other stuff is better supported), you have a completely capable PPC without having to take a huge risk and develop new technologies.
